So, last week I bought a great looking pot roast that would feed Mister and the Littles for at least two nights. I’m a twofer kinda gal. Anyhoo, the plan was to put this bad chicken (still a roast, just a cool hunk of meat) in the crockpot with some peppers and seasoning earlier this afternoon to be ready for this evening’s dinner. Plans changed when it turned out to be over 100 degrees today. Yes, it’s a dry heat but everyone I’ve met that has moved here from hot areas of the country but at lower elevations, has remarked about how intense the sun is. With this heat, call me cray-cray, but heavy comfort food in no way sounds good when it’s hot enough that you could possibly pit out just walking down the lane to the mailbox. Thank heavens for my epiphany of a recipe I’d recently pinned on Pinterest.
Onto the bbq went the chicken breast tenders, seasoned with garlic salt and away I went, wielding a sharp knife to slice and dice the cucumbers from our garden. We’ve harvested at least 35 cucumbers so far. Good thing we like them. Then, from memory, I made up some Tzatziki sauce. My ingredients were:
*about 2 cups of plain yogurt
*about 2 Tbsp. of olive oil
*3 cloves of garlic that I put in my garlic dicer
*3-4 dashes of dill
*about 1 1/2-2 Tbsp. of lemon juice
*3 pinches of kosher sea salt
Mix it up and test the flavor. You may want to add more garlic, more yogurt, etc. depending on your preference.
Shortly after, Mister brought in the grilled chicken tenders and on a bed of butter leaf lettuce they went, followed by diced cucumber, store bought and garden grape tomatoes (the orange tomatoes), Tzatziki sauce and lastly, topped it off with the sprinkling of feta cheese. Everyone at the dinner table slicked this meal down. This is what a tummy wants when it’s frickin’ frackin’ hot out, or as I refer to this heat, The Fires of Hell (to get my point across when at a nursery and asking what flowers and plants can survive the sun’s intensity).
Here’s the garlic dicer that I used. It was given to me several years ago as a present and this was a homerun! Yes, your household will have garlic breath until everyone decides to take a toothbrush and toothpaste to their teeth, but you’ll all be so happy after such a tasty and refreshing summer meal!
